Chardonnay Hake with Lemon & Garlic Butter

Ingredients:
500g good quality hake fillets
1 x pack fresh asparagus
Mixed herbs for taste
For the lemon & garlic butter:
1 x Tbsp virgin olive oil
1 x clove of garlic, crushed
125 ml good quality white wine (Chardonnay)
2 x Tbsp butter
60 ml double cream
60 ml all purpose flour
1 x handful basil leaves, cut into pieces
1 x handful parmesan cheese
1 x juice of a lemon
Method:
1. Using the grill option on your stove, set your oven on 180 degrees. 2. Meanwhile, in a small sauce pan on low-medium heat fry your crushed garlic clove until golden and crispy. Add in your good quality wine, and stir regularly for about 3-5 minutes, or until your whole kitchen smells like absolute deliciousness. 3. After 3-5 minutes remove your saucepan from the heat and add the butter and cream and whisk till stunning ness. 4. Place back your sauce pan on low-medium heat and let your butter bubble, and add in your basil, lemon juice, flour and parmesan cheese and whisk until it forms a butter effect and remove from heat. 5. Place your fish on a baking tray and spread with butter and mixed herbs. 6. Once done, place the fish in the oven allowing the fish to grill away to absolute perfection between 8-15 minutes. Once done remove from oven and serve immediately with a fresh salad and lemon, as well as your garlic & lemon butter for absolute happiness.
