Chicken Cordon Bleu (with a twist)

I don't know about you but from when I was little one of the dishes I admired was a good chicken cordon bleu. I remember our faces just lighting up with joy when my mom made it, but this time around I decided to make something more special and oh so healthy!
Ingredients:
4 x boneless chicken breasts
8 x pieces of bacon
4 x pieces of Italian ham
150g almond meal (check my recipe to make fast and effortless almond meal)
3 x eggs, beaten
Mozzarella cheese
Italian salt to taste
Method:
On a work surface, with a roller "wack" your chicken breasts until evenly. Once done, fill your chicken breasts with Italian ham, mozzarella cheese and Italian spice until goodness.
Once done, roll you're chicken breasts as tight as possible and wrap 2 x pieces of bacon per chicken breast, and leave to cool for about 30-40 minutes.
Meanwhile beat your eggs and blitz your almonds until it forms a floury shape. Once your chicken breasts have cooled dip in your egg mixture and almond meal, place in a casserole and drizzle with virgin olive oil. Repeat for all breasts.
Sprinkle with Mozzarella cheese and Italian salt to taste. Once done place in the oven on 180 degrees for round about 1hour or until absolute kitchen amazingness.
