Chicken Mac & Cheese (with Almond Milk)

Who does not love a good mac & cheese? I grew up with the gorgeous tastes of various mac 'n cheeses. This time around, I thought why not try something different such as an almond milk white sauce with some chicken breasts? As healthy as a mac & cheese can be!

Ingredients:


200g macaroni

4 x chicken breasts

Extra virgin olive oil

Garlic & lemon pepper


White sauce:


1.5kg all purpose flour

1.5L almond milk

50g of unsalted butter

Handful of white cheddar cheese

Salt and pepper to taste


Method:


Cook your macaroni according to the packaging instruction and drain.


In a saucepan, over low to medium heat, melt your butter until golden and bubbling then add your flour and stir regularly so that the white sauce do not form any clumps. Add in your almond milk and cheese and whisk away till nice and creamy and remove from the heat.


Preheat your oven to 180 degrees.

In a separate wok, fry your chicken in a small bit of extra virgin olive oil and season with garlic & lemon pepper. Fry until absolute golden goodness.

Cut your chicken breasts and mix your chicken, white sauce and macaroni together. Once done, add your cheese on top and bake for 20 minutes and then grill for about 10 minutes.

Serves a whole happy family!
