Gourmet Feta, Basil, Bacon & Mushroom Burgers (with a bun less pomegranate salad)

Isn't life all about the gorgeous things in life? I love the taste of pomegranate and decided to try something new with my home made gourmet burgers and the result was an absolute must! The taste and colours had me in love, and the meal was truly enjoyed by each and every happy face in my house!
You'll need:
450g extra lean mince
200g diced bacon
250f mushrooms
Handful of basil leaves, sliced in small pieces and a few for decoration
1 cup of feta cheese (use the herbs one)
Lettuce
Cucumber
Cocktail tomatoes
Mozzarella
The pomegranate rubies from one fresh pomegranate
Cheese, 2 slices per burger
Garlic & herb spice (season to taste)
Extra virgin olive oil
(Tip: Remember that the bacon is also quite salty - so do not over spice your mixture).
In a wok fry your mushrooms and bacon in a little bit (about 1tbsp olive oil)
Once fragrant and delicious remove from heat and leave to cool.
In a separate mixing bowl, add in your mince, feta cheese and fresh basil. Then add in your cooled bacon and mushroom mixture and finally spice with garlic and herb spice.
Once mixed together roll your meat mixture in a burger from and leave to cool in the fridge for about 45 minutes.
Preheat your oven to 180 degrees.
Before inserting your burgers in the oven, add your cheese slices on top and once done place in the oven and cook for about 30 - 45 minutes or until your cheese is gorgeously melted and your kitchen smells like absolute heaven.
To make your pomegranate salad, add the lettuce, cucumber, mozzarella, pomegranate & tomatoes on top of one another as you would to build a salad. Slide your burger on top, decorate further with pomegranate and finish off with beautiful green basil leaves!
Makes 5 gorgeous juicy and cheesy burgers!
