Ruan's First Love (with Almond Milk)

Sometimes life is all about trying new and exciting things, and for the first time I tried something healthier when it comes to my lasagne. Therefore I decided to make my white sauce with Almond Milk instead of normal milk and here it is for you to enjoy!
Ingredients:
500g lean mince
1 onion, crushed
1 big garlic clove, crushed
4 tbsp virgin olive oil
2 x 400g diced tomato's
50g tomato paste
150ml good quality red wine
Himalayan pink salt to taste
4 x lasagne sheets
Mix of mozzarella & cheddar cheese
White sauce:
1L almond milk
70ml all purpose flour
70g unsalted butter
70g parmesan cheese
Himalayan pink salt to taste
Black pepper to taste
Method:
In a big pot, fry your onions and garlic in your virgin olive oil until golden goodness. Once golden, add in your mince and fry until nice and beautifully brown.
Once nice and brown add in your diced tomato's, red wine and tomato paste and let simmer for round about 30 minutes and remove from heat.
Set your oven on 180 degrees.
Meanwhile in a separate sauce pan heat your butter and flour over medium heat and mix with a whisk.
Add in your almond milk and parmesan cheese stirring regularly until nice thick and smooth. Once nice and smooth, layer your lasagne in a big casserole, meat first, white sauce, cheese, and lasagne sheets and repeat until everything is in your casserole and sprinkle the remainder of cheese on top.
Bake for roughly about 30 minutes or until golden goodness.
Serves 6 deliciously hungry humans.
