Sticky Honey, Chutney & Mayo Chicken Breasts (stuffed with onion & garlic)

When I think of Chutney & Mayo I long back home to my mom's food. I remember the smell of her kitchen just lighting up all of our faces with that delicious smile. Now it's my turn with a twist, and let me tell you this was to die for!

Ingredients:

4 chicken breasts

6 x tbsp honey

250ml chutney

250ml mayonaise

2 x big garlic cloves, sliced

1 x small onion, sliced

Salt & pepper to taste

1 x finery gin (cucumber infused)


Method:


Pre heat your oven 180 degrees.

In a oven proof dish insert your chicken breasts and season to perfection. Then make a little cut squeezing in your garlic and onion.

Once done, drizzle with 2 x tbsp of honey.

Meanwhile in a separate bowl mix your chutney, mayo and remainder of the honey until nice and creamy.

Pour your mixture over the chicken, then season with some salt and pepper and add over your gin.

Bake for about 45 minutes or until the chicken is nice and sticky but also juicy in the inside.
