Stuffed Feta Peppers

You'll need:
Savory Rice Mix:
2 x peppers, sliced
250g white button mushrooms
200g diced bacon
4 x chicken breasts, sliced into strips
1 x cup rice, cooked
Handful of fresh basil, sliced
Extra virgin olive oil
Garlic & herb spice to taste
For the chicken breast:
1 x shot of Finery Gin
2 x Tbsp of orange blossom honey
Lemon juice
For the stuffed peppers
4 x peppers, either sliced in half or you can cut of the top part of the pepper
1 x block of feta
Method:
In a wok, drizzle with a little bit of extra virgin olive oil. Add in your peppers, bacon, basil and mushrooms fry until nice and golden.
Meanwhile in a small sauce pan cook your rice as per the packaging instruction and drain. Add into your savory mix over medium heat - once mixed through, remove from heat.
Once done, line up a pan, with a drizzle of extra virgin olive oil, add in your chicken strips, finery gin, orange blossom honey, lemon juice and fry until nice and golden. Spice with Garlic & Herb spice.
Line up your peppers and stuff with chicken and
the savory mix and lastly sprinkle with feta cheese. Bake for roughly about 40 minutes at 180 degrees.
