Summertime Chicken Deliciousness!

Oh my goodness. There is nothing better than a Sunday yumminess! And what better way then keeping it healthy and absolutely delicious!
Ingredients:
4 x chicken breasts 125g x plum tomatoes, sliced 1 x large potato, sliced in rings 4 x small carrots 2 x garlic cloves, sliced 3 x tbsp balsamic vinegar 4 x tbsp virgin olive oil 125g x brown mushrooms, sliced Lemon & garlic salt to taste 100ml good quality white wine 2 x sticks rosemary 5 x fresh basil leaves Mustard sauce
Method:
1. Heat your oven on 180 degrees.
2. Pour 2 x tbsp of virgin olive oil in your casserole. Place your chicken breasts in the casserole pouring over another 2 x tbsp of virgin olive oil.
3. Season your chicken with some lemon and garlic salt, and add in your sliced patatos, carrots, mushrooms and garlic.
4. Once in your casserole add in your balsamic vinegar, and white wine. Add in your rosemary and tomato's (halved on the top). Once done, season with mustard and decorate with your lovely basil friends.
5. Place foil over and cook for about 45 minutes. Remove your tin foil and cook open for another 10-15 minutes or until all veggies are soft and absolutely gorgeous and yummy!
